
Skin aging is influenced not only by sun exposure but also by diet. One of the most important diet-related contributors to aging skin is the formation of advanced glycation end products, commonly referred to as AGEs¹.
AGEs alter the structure and function of skin proteins, accelerating visible aging and reducing skin resilience.
What Are AGEs?
AGEs form when sugar molecules bind to proteins, lipids, or DNA through a non-enzymatic process called glycation¹. Once formed, these compounds are difficult to break down and accumulate in tissues over time.
In the skin, AGEs cross-link collagen fibers, making them stiff, brittle, and less elastic¹.
How Glycation Affects Skin Appearance
Healthy collagen is flexible and organized. Glycated collagen becomes rigid and fragmented, leading to:
- Reduced elasticity
- Increased wrinkling
- Thinner, more fragile skin¹
This structural stiffening explains why glycated skin appears dull, crepey, and less responsive to repair.
Dietary and Environmental Sources of AGEs
AGEs come from both internal and external sources:
- Endogenous glycation occurs with elevated blood sugar levels, reflected in hemoglobin A1c²
- Exogenous AGEs come from foods cooked at high temperatures, such as grilling, frying, roasting, and broiling³
- UV exposure directly triggers AGE formation in sun-exposed skin¹
Studies show that diets high in sugar and fried or charred foods significantly increase circulating AGE levels and inflammatory markers².
Reducing AGE-Related Skin Aging
Limiting AGE accumulation involves both dietary choices and cooking methods:
- Emphasizing fruits, vegetables, and fiber-rich foods
- Choosing water-based cooking methods like steaming, boiling, and poaching³
- Supporting blood sugar balance to reduce internal glycation²
By addressing glycation, it is possible to slow one of the most damaging contributors to skin aging.
